Soft Rye Bread

This is another recipe adapted from Peter Reinhart's Artisan Breads Everyday that I'm crazy for recently.

It is really soft and chewy even without adding oil in it. I have a crush on its aroma. It is so sharp that everytime I open the lid of the box which used to store my bread in the freezer, the smelling just comes out, then I'm dizzy...
Although the smelling of this bread is distinctive and sharp, you still could make lots of variations.

I've made it plain for the first time. For the second time, I omitted the cocoa powder and added some cheese cube in it...a little bit salty, a little bit sour, good combinaiton. This time I have my bread cocoa powder, orange peel and caraway seeds, just similar to the original recipe...
Verdict? Honestly, I don't like the smell of caraway seeds, more precisely, I don't like the combination of orange peel, cocoa powder and caraway seeds. Maybe caraway seeds are OK for me, but the flavor is weird when they goes with the other two ingredients. Next time I will put in chocolate chunk instead of caraway seeds. XD

Still, I screwed up the scoring process.../__\
It's OK. I won't give up! ˋ_ˊ
