Peter Reinhart's 100% Whole Wheat Sandwich Loaf




I've made this bread three times during these days because I'm crazy about the flavor. But each time I did something different. I used the same recipe for the first time, omitted the oil for the second time, then used water to replace the milk and added 1/2t ground cinnamon for the third time. Each time gets more dense and drier after each time. This is the result that I've expected, but I want to know how bad it could be? For me, I like to eat the first one withoug toasting it, but I also enjoy the last one with jam or peanut butter on top after toast it. It smells really great, I've eat the same bread for breakfast everyday for almost a whole month!
