Yogurt Mousse Chocolate Cake with Raspberry Jam 。 Mocha Roll
I'm so exciting this morning, the yogurt mousse I use in the cake is so delicious and the best thing is that it can't be any easier to make! I've never expected that the texure could be this creamy like adding heavy cream in it. I only use Greek style yogurt, maple syrup and galetin, and it came out fantastic.
The only thing I'm not satisfied with is the color of raspberry jam.../__\ It almost looks like the color of pig's liver.
Since I only left a little bit yogurt, I make another cake, mocha roll, which was just soaked in the rum and filled with coffee butter cream I left for making opera cake last time, then roll it up...simple but better than some other cakes that is complicated to make.
I use my favorite recipe of chocolate cake with a little modified to be the cake layer...I tried to make the chocolate cake with hazelnuts flavor by using Nutella, but I was failed. The flavor of whole cake is dominated by Valrhona chocolate(85%:11g//71%:19g), which is also good to taste but I couldn't feel any NutellaQQ...
And the chocolate cake this time is not that sweet, so it is perfact to taste along with my sweet coffee butter cream and raspberry jam!
Ingredients:
for chocolate cake
- Nutella 24g
- egg yolks 2
- valrhona chocolate 85%:11g//71%:19g
- heavy cream 45g
- egg whites 2
- granulated sugar 35g
- cake flour 28g
- cocoa powder 6g
- rum
Mix Nutella and egg yolks and beat them until thick. Heat heavy cream to 80 degrees C and pour into the chopped or half-melted chocolate, then combine them until smooth. Add chocolate milk into the batter of egg yolks, set aside. Beat egg whites until soft peak, then take terns to fold the egg whites and shifted powder into the batter. Bake for 15~18 min under 190/150 degrees C . After the cake is cool, make it soak rum.
for yogurt mousse
- plain yogurt 8oz.
- maple syrup 2tbs
- milk 6tbs
- gelatin 1/2tsb(2g)
Mix plain yogurt and maple syrup. Using warm milk to dessolve gelatin which is already being soft by soaking in ice water. Mix all things up and let it cool. Then you can use to assamble when it comes a little bit firm.
