Apple Hazelnut Chocolate Cake



Another flourless chocolate cake. This is another good stuff that I definitely will make it over and over again. The original recipe is adapted from Valrhona. Since I don't have whipping cream on hand, I used condensed milk instead. The cake is amazing in many aspects. It is moisture even without using other oils or butter. Though it involves quite amount of chocolate, it tastes fluffy. It tastes like mousse when you serve it warm but it tastes like cheesecake after being frozen. And if you rewarm it in the oven, it will taste like mousse again! The toppings, apple and hazelnut, make the cake extraordinary. However, you can substitute any other toppings like cocoa nibs, almond, or some other fruits if you will. Enjoy this dark, rich and melt-in-your-mouth cake!


Ingredients


-1 Granny Smith
-50g hazelnuts, chopped
-250g chocolate
-150g whipping cream (condensed milk)
-60g egg yolks
-4tsp cornstarch(omitted)

-50g honey
-90g egg whites

-confectioner's sugar and ground cinnamon
