Cashew Pound Cake
This is made for my Mom who is not interesting in fancy cakes but only like to eat the cakes that are simple and plain. As you can see, I tried to make it marble-like, but I seemed to fail. XD
Although I've made many pound cakes before, this is the first time I adapted the classic, old fashioned recipe - 1 pound of everything in the ingredients. Moreover, I used the technique which is unusual and different from what I used to use. I followed every single step in the direction with doubts...The result is perfect! My Mom who used to be picky in eating love the cake very much. The texture is incredible delicate. It is rich, moisture, dense, creamy and melt in your mouth with each bite. It totally reverses some ideas that I've learned before.
Ingredients:
- 110 g sugar
- 110 g eggs
- 110 g AP flour
- 110 g butter
- 1 T cocoa powder
- some water
Directions:
1.Beat the butter until fluffy.
2.Add flour 1 T each time, and continually beating until well-combined.
3.Add the sugar 1 T each time and continually beating until well-combined.
4. Add 1 egg each time and continually beating until well-combined.
5. 180 degree C/50 minutes.
